I made these the other night just winging it.  They were a HUGE success.



1.  Cube up half a bag of red potatoes and boil until tender.  Leave the peels on.



2.  Drain water and return potatoes to the pot.



3.  Add crumbled bacon bits (Real please), and scallions along with a pinch of kosher salt



4.  Mash 2-3 times and stir.  Then mash another 2 times and stir.  (We don't wanted mashed potatoes).



5.  Top with shredded cheese  ...</description>

Items Needed:



Breakfast Sausage (We used HOT)

Cheddar Cheese Cubes

Jalapeno Slices





1.  Divide the sausage into 10 even portions.  Flatten these pieces out into something resembling a pancake.



2.  In the center of each piece of sausage, place a cube of cheddar and 1-2 jalapeno slices.



3.  Gather the sides around the cheese and jalapeno, and gently roll into a ball.

These are the easiest cookies ever to make and can be adjusted for diabetics



1 Egg

1 cup sugar (1/2 cup Splenda for diabetic version)

1 cup chunky peanut butter (no reduced fat or creamy, it must be chunky)

1/2 cup mini chocolate chips (optional)



Mix all the ingredients by hand until combined thoroughly (don't over beat)

Pre heat oven to 350 degrees

spoon cookies onto backing sheet

I made this smoker three years ago and have used it for pork, beef, chicken, fish, and vegetables.  The best part of this entire thing is that the overall cost is about $50.00 or less.
