Oh, my gosh...these are to DIE for. From Mirj on Recipezaar. If you're looking for something easy but with lots of flavor, this is it. I serve it with home made honey mustard sauce. I'll post that recipe soon. I suggest tripling this recipe for a gathering of 15 people or so. This can also be adjusted for your own taste by adding other favorite spices to the bread crumb mixture, but I like this just as it is. I sometimes add just a bit of finely shredded fresh Parmesan cheese to the bread crumbs.

Chicken Garlic Bites

16 bites 40 min 30 min prep

2 boneless skinless chicken breasts, cut into bite size pieces and trim off any fat.
1/2 cup olive oil
4 cloves garlic, minced
1/4 teaspoon pepper
1/2 cup breadcrumbs (I use garlic and herb bread crumbs when I can find them)
1/4 teaspoon cayenne pepper

Place chicken in shallow dish or a food safe ziplock bag.
In a small bowl, mix olive oil, garlic, and black pepper.
Pour over chicken.
Cover and marinate 30 minutes. This can also be done the night before.
Drain.
Preheat oven to 475°F.
Mix bread crumbs and cayenne.
Coat chicken.
Arrange in a single layer on cookie sheet.
Bake 10 minutes or until brown.
