I didn't see a topic for cookies, so I put them under cakes......
These are the easiest cookies ever to make and can be adjusted for diabetics
1 Egg
1 cup sugar (1/2 cup Splenda for diabetic version)
1 cup chunky peanut butter (no reduced fat or creamy, it must be chunky)
1/2 cup mini chocolate chips (optional)
Mix all the ingredients by hand until combined thoroughly (don't over beat)
Pre heat oven to 350 degrees
spoon cookies onto backing sheet
criss cross with fork dipped in sugar
bake for 9-12 minutes depending on your oven until they are soft and chewy.
