 Smoked Armadillo Eggs

I made these for the first time yesterday and they were great!

Items Needed:

Breakfast Sausage (We used HOT)
Cheddar Cheese Cubes
Jalapeno Slices


1. Divide the sausage into 10 even portions. Flatten these pieces out into something resembling a pancake.

2. In the center of each piece of sausage, place a cube of cheddar and 1-2 jalapeno slices.

3. Gather the sides around the cheese and jalapeno, and gently roll into a ball.

I set these in my homemade smoker for 90 minutes. If you make larger portions your time will increase. THose of you who don't have a smoke can use the oven at 250 degrees for an hour to an hour and a half.

If these may be too spicy for you, then using mild or medium sausage will work fine for you.
